Ingredients:

For the Salmon:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

For the Salad:

  • 4 cups mixed greens (spinach, kale, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup walnuts, toasted
  • 1/4 cup feta cheese (optional)

For the Dressing:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey (or maple syrup for a vegan option)
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, mix together the olive oil, turmeric, cumin, salt, and pepper. Brush this mixture over the salmon fillets.

  3. Place the salmon fillets on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  4. While the salmon is cooking, assemble your salad. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, toasted walnuts, and feta cheese (if using).

  5. In a separate small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper to make the dressing.

  6. Once the salmon is done, remove it from the oven and let it cool slightly. Then, break it into smaller pieces and add it to the salad.

  7. Drizzle the dressing over the salad and toss everything gently to combine.
